Sweet and spicy....
1. Pre heat the oven to 180 degrees celsius. Line a small baking tray with greaseproof paper or tin foil.
2. Blend together the butter, light brown sugar, 1/4 teaspoon cinnamon, mixed spice, zest & juice of 1 orange or lemon in a bowl with a wooden spoon. Mix through the flaked almonds and raisins.
3. Place the cored apples side by side in the baking tray. Rub all over the outside of the apples with the butter mixture then fill as much as you can into the cored out area. Place the apples into the heated oven for 20-30 minutes until they are soft and tender.
4. Remove from oven and leave to cool slightly. Serve with a dollop of low fat natural yoghurt or light creme fraiche and a dusting of ground cinnamon.
