Smoked Mackerel Pitta Pockets

Fantastic in season fish dish....

Serves 4

  • 1 250g pack Smoked Mackerel fillets (skin removed and broken into large chunks)
  • 2 fresh radish (thinly sliced)
  • 1 medium carrot (washed, peeled and grated)
  • 1 tablespoon light mayonnaise or low fat natural yoghurt
  • 4 wholemeal pitta breads
  • 2 large handfuls of watercress (rinsed and dried)
  • 1/2 fresh lemon
  • Freshly ground black pepper (to taste)



1. Make the dressing by mixing together the mayonnaise, a squeeze of lemon and freshly ground black pepper in a bowl.

2. Warm your pitta breads in the oven or grill. Remove then cut them in half,taking care not to burn yourself.

3. Open up the pitta pockets and spread some dressing onto each section then stack your ingredients starting with the watercress, carrots, radish then mackerel. Serve immediately.
